After the used vegetable oil is collected from the restuarant it is important to test for water.  This is a very simple test all one must do is heat the vegetable oil to above 212F and look for water boiling off.  If you see water boiling out of your used vegetable oil then you must be prepared to dewater all the oil before you react it as water will inhibit transesterfication.  It is not energy efficient to heat a large batch of oil to 212F nor would it help the titration values therefore we must rely on evaporation to dry the oil.  Therefore we can heat the oil to 130F which is the optimum processing temperature and allow the oil to circulate with good airflow.  Periodically do the test for water again.  Once the oil passes the water test and there is no water boiling off then you should be good to process the oil.
